Following tradition, the beloved art form starts with the careful selection of the finest durum wheat semolina to ensure the pasta has the proper elasticity to cook perfectly al dente. The dough is kneaded by hand, lovingly shaped into intricate pasta cuts, patiently air dried, and personally graded, weighed, and sealed in the bag.
